Vegan Vanilla Cake Recipe
As a wedding cake maker I am often asked to cater for vegan diets, which used to scare me - could it still work as a sugarpaste decorated cake? Would I be able to stack it? Would it be dry and crumbly or perhaps oily and soggy?
I tried so many recipes and have spent time tweaking and perfecting my own recipe and method to still get a nice, light sponge cake with my vegan bakes.
I use this recipe for all of my vegan cakes, including cupcakes too - feel free to half or even quarter the quantities to give you a smaller cake or cupcakes.
